Pot Roast Burgers

Leftover Roast from the night before is now upcycled into a fabulous burger!

Take your leftover meat and cut/chop/shred it (in the gravy).  I added a cup of stock so that it got a little bit soupy when I was letting it heat up.




Once you have it nicely chopped, put it in a saucepan or slowcooker (on warm) to get nice and juicy.








Slice up 2 large onions in very fine slices.  Put about 3-4 tbsp olive oil n a frying pan.  Over high heat, saute the onions until they are translucent and starting to brown and caramelize.

In the meantime, take out a cookie sheet and preheat the oven to 375 degrees.

Lay tops and bottoms of onion buns on the cookie sheet and a thick slice of cheddar cheese on the bottom bun.

Bake until the cheese is melted and the buns are toasted.


Make a mixture of sour cream and horseradish sauce (for the top bun) -you choose the ratio.  We like it potent in our house.



Put everything together hot.  I served with baked beans and coleslaw.
A 3 lb roast makes about 10-12 servings(burgers).

And, yes.  Those are paper plates.  No judging.
