Homemade Granola Bars in the Crockpot
My 2 year old is *obsessed* with bars. He requests them at all hours of the day and night. The last time I picked some up from the store, I got home and told him I got something at the store for him.... "New Bars." His response was "YAY!" - Seriously like he had just won the lottery. I kind of feel like I need to budget in 'bars' because we go through so many of them. Solved. Actually more than solved. These are much better for him and cheaper by far.
This is your base (along with the honey & egg):
6 cups oats
1/2 cup Brown Sugar
Throw the oats & brown sugar in the crock pot and add (whatever you like).
1 cup wheat germ
1/8 cup Chia Seeds
1/2 cup chocolate chips
2 cups coconut
3 cups raisins
1/2 tbsp cinnamon
Mix 2 eggs, 1 1/3 cups honey & 1 tbsp vanilla* Pour this over the mixture already in the crockpot and keep mixing until the wet is thoroughly mixed into the dry.
2 eggs = 4 tbsp cornstarch + 4 tbsp water.
Honey = Agave Nectar.
Crock on high for 2 hours stirring occasionally to make sure nothing is burning on the bottom. Make sure the lid is vented just a bit.
Line a deep cookie sheet/bar pan with parchament paper. Pre heat the oven to 300 degrees.
When you are ready to pour into the bar pan for 'baking', Quickly mix the rest of the bag of chocolate chips and 1/2 a bag of mini marshmallows into the mixture. Pour onto the baking sheet and press evenly into corners.
Bake for 10 minutes and then let cool completely before cutting into bars. Wrap separately and store in an air tight container or ziploc bag.
Next time, I'm adding protein powder and rice krispies cereal!
