Crockpot Stuffed Pepper Soup


Gather together:

1 pound chub of ground turkey (cook ahead of time & add taco seasoning)
4-5 cups precooked rice
1 large jar/can spaghetti sauce
1 14.5 oz can diced tomatoes
3 small cans tomato sauce
+ Extra water if your soup is too thick
3 large bell peppers chopped largely
1 can corn
Shredded cheese blend




Place all ingredients (except for rice) in Crockpot and turn on low.
When simmering, add rice.

Serve with ample amount of cheese on top.

Blackened Salmon Salad & Clam Alfredo

Grouping the two together, because I only have 'final' pictures.

And, well, they are both seafood, right?

Both are super easy and delicious.

Blackened Salmon Salad

Take 2 large heads of Romaine lettuce, rinse and chop coarsely. Place in large bowl and toss with Caesar dressing, croutons & Parmesan cheese.

Coat (generously) each side of a salmon fillet with a Cajun seasoning. (I used Sawtooth)

Place a bit of oil in a pan and turn on Medium heat. 
'Blacken' each side of fish and place on top of Salad greens.

Serves 2-3 depending on the size of your fillet.











Clam Alfredo

Boil bag of pasta shape of your choice.  I used Campanelle.

Drain water from pot once pasta is done and add (3) cans of minced clams (with the juice) to the pasta.

Add 1 jar of white sauce of your choice + 1 cup milk & 1 packet of  'Alfredo' sauce mix. Let everything simmer until sauce is thickened.  Stir regularly.

Sprinkle ample amount of parsley (fresh or dry) to completed meal.

Mock Beef Pho



I've been really trying to clean out the pantry lately.... grabbing a couple 'like' items and then seeing what I can make by purchasing one or two additional ingredients.  I have had 2 packets of Au Jus (originally intended for French Onion Soup) calling my name for about a month now.  My onions come and go and never get made into soup.  I saw a picture of Pho the other day and thought to myself,  'I can make something like that!' 

Here's what I had:

2 packets of Au Jus
1/2 bag of thin Rice Noodles
1 bag Julienned Carrots (I used 1/2)
5 slices leftover deli Roast Beef (I sliced & diced)
2 deseeded and diced Jalapenos
1 bunch Green Onions (sliced- for garnish)
1 can Bean Sprouts (I wanted fresh but couldn't find)
1 bunch of Cilantro (chopped coarsely for garnish)

Make Au Jus in Med-Large Pot and bring to a boil.
Add Rice Noodles, Carrots, Roast Beef & Jalapenos.
Turn Burner off and let noodles become soft.
Add (well rinsed) Bean Sprouts.


Serve garnished with green onions, cilantro and a splash of soy sauce.

BBQ Chicken Mini Pizzas



When I start feeling 'blah' with food (which if you couldn't tell- I have been lately, because my dinners are....well, blah)  I have to make something into a different form than it originally was or intended to be. 

I placed 3 chicken breasts in the crockpot this morning (with about 1/2 c BBQ sauce) and when I got home, I went... "Well, what now?!"


I had some Sourdough bread that needed to go, so instead of a traditional 'BBQ Chicken Sandwich' I decided I would make some little pizzas.

Ingredients:

3 Chicken Breasts (Crocked with 1/2 C BBQ Sauce)
Sourdough Round Bread
BBQ Sauce of your choice (whole bottle)
Mixed Cheese Blend
1 large Tomato
About 1/4 c Diced Red Onion
2 Fresh Jalapenos (deseeded & diced)

Assemble the pizzas how you would like.  I put more BBQ sauce in with my chicken and shredded it up before putting it on the pizzas.


Preheat the oven to 375° 
Place your pieces of bread on a stone.
Spread some BBQ sauce on each piece of the bread.
Then some cheese, chicken, tomato, onion, jalapeno & top with more cheese.

Bake in the oven for 10-15 mins or until the cheese is nice and melty and the bread is a bit crispy.

These turned out delicious!!! (If you are vegetarian- just omit the chicken.  you'll never know the difference!)
