Crockpot Chicken Tortilla Soup



Throw 2 large Chicken Breasts in the crockpot with 3 cups water and 1 can enchilada sauce.

Crock all day on 'Keep Warm' setting.

When done, shred the chicken, then add about 2 Tbsp of concentrated Chicken Base.





I put the following in my Vita-Mix:
1 Roma Tomato
1 lb Baby Carrots
3 stalks Celery
1/2 Large Onion
3 Cloves Garlic
1/2-1 tsp Cumin
Large Handful of Cilantro
Handful of cheese
2-3 cups HOT water
*If you like spicy, add jalapenos*

Blend on High/Max Speed for about 4 minutes

Then add a can of drained corn and pulse or blend on low (don't puree)

Pour the blender contents into the crock and let heat more.


Garnish with crushed tortilla chips, sour cream, jalapenos, salsa, avocado... whatever you'd like!

Freeze leftovers for an EASY thawable meal!

PB Choc Chip Surprise Muffins





You will need:

2 1/2 C Flour
3/4 C Sugar
1 Tbsp Baking Powder
1/2 tsp Salt
1 1/4 C Vanilla Rice Milk
3 Egg whites + 1 whole egg
1/4 C Apple Sauce + 1 Tbsp Oil
3/4 C PB Chips
3/4 C Choc Chips
+ 18 Chocolate Peanut Butter candies

Preheat oven to 350 degrees & Line a muffin pan + grease a small loaf pan.
Place 1 unwrapped candy in the bottom of each muffin liner and the remaining candies in the bottom of the loaf pan.

Combine the 1st 4 (dry) ingredients in bowl and set aside.

Combine the all the wet ingredients and then add the wet to the dry ingredients and mix lightly (ok to be lumpy).

Gently fold in all chocolate and PB chips to batter.  Then using a large scoop, fill the liners about 3/4 full with batter.

Bake 18-20 minutes or until toothpick inserted into center of muffin comes out clean.  Loaf takes more like 30-35 minutes.

Italian Orzo Skillet


All of a sudden I'm obsessed with making Italian food.  I don't know why, but it's happening.... I keep trying to remember the stuff my Dad made when I was little and all I can see is Garbanzo Beans and Cannolis.

This was super easy to make and gave me the opportunity to use up some veggies that were on their way out....

Get out the following ingredients:

1 Tray Italian Sausage (I used Turkey)
2 Cans Diced tomatoes (undrained)
1/2 box Orzo pasta
2 Green Peppers (largely diced)
1 Eggplant (largely diced)
3 Bullion cubes (beef or chicken)
1 Scallion (Minced)
1 tbsp Garlic (Minced)
2 tbsp Italian Seasoning



Boil sausage until plump and cooked thoroughly.

Take the diced green pepper and eggplant and sautee in about 2 tbsp olive oil until cooked, but not completely through. 

Add the garlic and scallion and on high heat sautee quickly.

Put into another bowl until later.







Put the bullion cubes and about 4 cups water into the hot pan. 

Get simmering and then add the orzo.  Allow to simmer for about 2-3 mins and then add the veggies and the precooked sausage (cut into chunks).






Add the cans of diced tomatoes and the seasoning.

Cook until everything is done and the water is absorbed well.

Top with Parmesan cheese.

Jillian Michaels Detox


This is the best detox I have found that is natural, easy and doesn't take like um... garbage? 

The detox should be done for 7 days.
Super easy and you could lose more than 5 pounds (water weight/bloat)!

Purchase the following:

Distilled water (4 gallons)
1 box Dandelion Root tea
Pure unsweetened cranberry juice
Pure REAL lemon juice.


You will need to drink 64 oz of the 'tea' everyday for 7 days.  I make it up in the Gallon of water (for 2 days) cause it makes life easier.  I'm also only using 1 teabag every 2 days and it's portable.


So, take your Gallon of water, drink about 8 oz or pour it out.

Add 2 tbsp of Cranberry juice
Add 4 tbsp of Lemon juice
Add 1 tea bag

Let sit overnight and start drinking in the morning- throughout the day for the next 7 days :)
