Totally in the mood for pizza, but didn't want to go to the trouble of making a crust, etc.
So.... I pulled out my panini maker, some sourdough bread, a jar of pizza sauce, sliced mozzerella and cheddar cheeses and some favorite toppings.
Assemble your choice of toppings and cheese in the buttered bread (I actually used mayo instead of butter- makes it crispier.)
When its done, let cool for about a minute and then using kitchen scissors, cut into strips for dipping in the pizza sauce.
I served with a 'copycat' Olive Garden Green Salad and pan fried polenta.
It was a hit!
