Lemon Poppyseed Poundcake

This is a simple DELICIOUS cake!!!

I was going for poundcake consistency, but it is not.  Just cake-like.

You will need:
  • 1 cake mix (lemon or yellow)
  • 1 package lemon instant pudding
  • 4 eggs
  • 1 cup water
  • 1/3 cup oil
  • Zest from 2 lemons
Mix everything together and then add 2 tbsp poppyseeds.
Pour into 2 'sprayed' loaf pans (no more than 1/2 full) and bake for 35 minutes in a 350 degree oven.
Cut both lemons in half and squeeze the juice into a bowl. Add about 2 cups or more powdered sugar until you have the consistency of paste.
When the center of the cake is done, pull from the oven and let cool completely.

Poke holes all over the top of the cake with a chopstick.

Pour the frosting over the cake evenly.

Slice and enjoy!
