Pork Chili Verde - Superbowl food


Chili Cookoff for Superbowl! 

My mission was Pork Chili Verde.

All my ingredients:

3-4 lbs pork loin -Crocked with:
2 tbsp minced Garlic
1 Large can Mild Green Enchilada Sauce
Some leftover green taco sauce

Once Pork is done, shred as well as you can.

Chop 1 large onion, scallion and sweet peppers in large chunks (with large chopper grate). Add to crockpot.
Switch to small grate and chop all hot peppers -I used 6 of each, (deseeded & membraned)jalapenos & red chili peppers- add to crock.

Now drain 2 large cans tomatillos and pulse in a food processor.- add to crock.

Stir everything up, let simmer for a couple hours on keep warm.

Add to Crock:
2 cans white kidney beans
1 can black beans
2 small cans diced green chiles
1 Can corn

1 tsp Cumin, 1 tsp Celery Salt.

At the end, I added an entire bottle of green hot pepper sauce (not pictured). 

Garnish with lots of fresh cilantro!
