Blackberry Cream & Bananas Foster Crepes
To make crepes, mix ingredients in this order:
1 cup whole wheat flour
4 egg whites
1/2 cup milk (I used vanilla rice milk)
1/2 cup water
1/4 tsp vanilla extract
1/4 tsp salt (optional)
1 tbsp melted butter
Make sure it is mixed well. It needs to be VERY runny.
Spray a little olive oil in a medium sized pan and over medium- high heat, pour 1/3 cup batter into pan. Pick the pan up and turn at an angle to get the batter covering the entire bottom.
It will cook quickly. As soon as you can see that the bottom is done (the top will start to look done as well), flip and cook for about 30-60 seconds on the other side.
Filling:
I did two types of fillings.
#1- Blackberry Chia Jam /Vanilla YoChee & Cottage Cheese Mixture + Cinnamon Blend
#2- Cut up fresh banana, 1 tbsp Caramel/Vanilla YoChee & Cottage Cheese Mixture + Cinnamon Blend
Fill Crepe and garnish with powdered sugar.
Around 250 Calories EACH!
